the worst question i ask myself. ever.
i finally sat mr. j down on sunday and asked "what do you like to eat?" and then i took copious notes.
three years of marriage and i've never asked that question. i've definitely hinted, inferred, even suggested that he make some culinary demands, but never outright, straight-forwardly asked. it was actually a really fun conversation, one-sided as it was.
then i took some brain-time, a quick inventory of the freezer, fridge, and cupboards after my latest costco run, and did my best to apply my fledgling knowledge of whole grains to the anticipated palates in the context of our hot and humid climate.
result: two days of a planned dinner menu. i was shooting for more like 5-7 days, but i'll take what i can get.
sunday:
main entree =
phyllo dough strudels with chopped spinach, mushroom, and vidalia onions, seasoned with thyme, great northern bean "cream" sauce, a little pecorino romano, spicy mustard, and filled out with cooked red and white quinoa. i used olive oil to coat each layer of the dough before burrito-style rolling up the spinach and baking
sides =
steamed asparagus with a tiny little pink salt
grapefruit and avocado salad
monday
main entree =
chicken salad with celery, cooked red and white quinoa, sunflower seeds, and craisins, seasoned with old bay and helmann's mayo, served on a bed of homegrown spinach
sides (and in some cases optional toppings) =
diced tomatoes
sliced avocado
peeled and sliced cucumbers
grapefruit and avocado salad (again, i know! but the vinaigrette is so good for dipping the cucumbers!)
tonight =
the dreaded question remains unanswered.
it's naptime and i have 3.5 hours until go time...

Given that it is obviously quality over quantity for your dinner plans two days is definitely plenty--all that stuff looks awesome and takes me back to the good old days...YUM
